Chicken Tenders with Seemingly Ranch (and chick-fil-a sauce)

These chicken tenders, and the sauces that I made to accompany them, are so crunchy, delicious and perfect for a late night snack or as dinner alongside salad and those dips.





 

Ingredients:


For the seemingly ranch (pickle dip):

.5 cup Greek yogurt (or skyr or sour cream)

.25 cups diced dill pickle

1 tbsp of dill pickle juice (from the pickle jar)

2 tbsp finely chopped dill

1 tsp garlic powder

1 tsp dried parsley

.5 tsp of mustard powder

juice from half of a lemon


For the copycat chick-fil-a sauce:

.5 cup Greek yogurt (or skyr or sour cream)

.25 cups of honey (or hot honey)

2 tbsp yellow mustard

.25 cups of BBQ sauce

juice from half of a lemon


For the chicken tenders:

1 package of chicken tenders, about 1.5 pounds or 10-12 strips

1 cup panko bread crumbs

1/4 cup all-purpose flour

2 large eggs

.5 cup parmesan cheese

.5 tsp dried oregano

.5 tsp dried parsley

.5 tsp paprika

1 tsp garlic powder

2 tbso olive oil

Salt and pepper to taste


Let's Assemble!




Essential Equipment


My big ole' bowls are the Anthropologie Briar pasta bowls and they are unfortunately no longer available. The closest thing that I could find are the Ginny pasta bowls, also adorable, but shinier than the Briar ones.


My measuring cups are also from Great Jones. Cutest of all time.


I got the ingredients for this recipe from my local Trader Joe's! Very accessible ingredients.


For the seemingly ranch (pickle dip):

Combine all ingredients in a medium bowl and mix until uniform.


For the copycat chick-fil-a sauce:

Combine all ingredients in a medium bowl and mix until uniform.


For the chicken tenders:

Preheat oven to 425F.


Cover a baking sheet with foil.


Combine the panko bread crumbs, parmesan, oregano, paprika, and garlic powder in a medium bowl. Mix until smooth.


Set up 3 coating dishes.

-1 with the flour

-1 with whisked eggs

-1 with the panko bread crumb mixture


Season the chicken tenders with salt and pepper.


First coat the tenders in flour.


Then coat the tenders in the eggs.


The coat the tenders with panko cread crumb mixture. Make sure to press the mixture into the tenders.


Transfer the tenders to the baking sheet.


Bake the breaded chicken tenders for 15-20 minutes at 425F.


Serve with the sauces!
