Copycat Olive Garden Salad

This salad is a bright and zingy salad that is perfect as a side dish to any Italian dish or as a dish all on its own. The dressing is high protein because of the Greek yogurt and super flavorful because of all of the seasonings. I made this salad based off of the description of the dish on Olive Garden's website so it is technically a copycat, but honestly it is wayyyy more flavorful and delicious than I remember the salad being. This salad could be upgraded with the addition of a protein if you want to stray from the authentic Olive Garden ingredient list. Enjoy alongside my copycat Olive Garden breadsticks.





 

Ingredients:


Italian Salad Dressing:

.5 tsp onion powder

.5 tsp garlic powder

1 tsp oregano

.5 tsp of thyme

3/4 cup olive oil

1/3 cup white vinegar

1/4 cup water

2 Tablespoons Greek yogurt

Salt and pepper to taste


For the salad:

Head of iceberg lettuce, roughly chopped

1 cup of grated carrots

1 cup of thinly sliced red cabbage

3 small tomatoes diced

1 cup pepperoncinis, roughly chopped

1 small red onion thinly sliced

1 cup black olives, roughly chopped

1 cup croutons

1 cup grated Parmesan Cheese

 

Let's Assemble!



Essential Equipment

My salad bowl and tongs are both from Saarde. They have the most beautiful, high quality, durable kitchen ware. My favorites are from the flow resin set.


I got all of the ingredients for this recipe from my local Vons. Super accessible ingredients!


For the salad dressing:

Add all ingredients to a medium bowl.


Whisk together with a small whisk or a fork until smooth.


For the salad: 


Combine ice berg lettuce, carrots, red cabbage, tomatoes, red onions, olives, and pepperoncinis in a large salad bowl. Mix well.


Top with croutons and parmesan cheese and mix until uniform.


Pour the salad dressing over the salad. 


Mix well!
